Mini Chicken Black Pepper Crunchy Tacos: Mini size, maximum flavour
Mini tacos to share (or not)!
With extra-crunchy Hot & Spicy Country Style® chicken tenders, homemade guacamole, fresh coriander and crunchy red onions: a burst of freshness and flavour in every bite.
Ingredients (for 3 mini tacos):
- 3 mini wheat or corn tortillas
- 3 extra-crunchy Hot & Spicy Country Style® chicken tenders
- 2 tablespoons of homemade guacamole
- A few leaves of fresh coriander
- ¼ finely chopped red onion
- Lime juice (optional)
Quick homemade guacamole:
- 1 ripe avocado
- Juice of ½ lime
- 1 tablespoon olive oil
- Salt, pepper, pinch of mild chilli powder
Mash and mix until creamy.
Preparation:
1. Cooking the extra-crunchy Hot & Spicy Country Style® tenders
- Oven: 220°C for 18-20 minutes
- Deep fryer: 180°C for 4-5 minutes
Cut each tender into two or three pieces.
2. Assembling the mini tacos
- Lightly heat the tortillas in a frying pan or under the grill.
- Spread with homemade guacamole.
- Add the crispy tender pieces.
- Sprinkle with red onions and coriander.
- Add a dash of lime juice just before serving.
Chef's tip:
Add a dollop of crème fraîche or jalapeño sauce for a creamier or spicier touch!
